Ingredients
- 40 g hummus
- 2 whole eggs (~100 g)
- 1 avocado (~200 g)
- 50 g cherry tomatoes
- optional: a tiny bit of salt
- optional: 1 tsp black pepper
- optional: 2 g chives (chopped)
Instructions
- Preheat oven to 425°F (220°C).
- Wash and chop chives (optional) and set aside. Wash and slice tomatoes and set aside.
- Cut avocado(s) in halves, making a bowl to put the egg(s) in. If you are using less, remove the extra. Place them in a baking dish, resting them along the edge so the avocado won’t tip over.
- Crack the egg(s) into the avocado(s), being careful to keep the yolks intact.
- Add cherry tomatoes on top of avocado and season with salt and pepper.
- Gently place baking dish in the preheated oven and bake until eggs are cooked, about 20 minutes. Let cool then top with hummus and chives. Eat with spoon and enjoy!
